Porter Hope Biscuits

Ingredients

12 ounces all-purpose flour (350 g)

1 tsp cream of tarter

½ tsp baking soda

8 ounces butter, (225 g), plus extra for greasing baking sheet

8 ounces Imperial granulated sugar (225 g)

1 large egg, beaten

Instructions

Preheat oven to 350 degrees.  Grease 2 baking sheets.

Add the flour, cream of tarter and baking soda into a mixing bowl and whisk together.  Rub in the butter, then stir in the granulated sugar.  Add the egg and mix to form a firm dough.  Use a medium cookie scoop (or break of walnut size pieces), roll into balls; place on the prepared baking sheets & flatten with a fork.  Space well to allow for spreading. 

Bake on the middle rack in the oven for about 20 minutes, or until golden.  Leave on the baking sheets to cool for about 5 minutes, then place on a wire rack to cool completely.
