Banana Pudding

Ingredients:

2 cups whole milk

3/4 cup granulated sugar

1/3 cup All-purpose flour

1/4 teaspoon salt

3 large egg yolks

1 teaspoon vanilla extract

3 ripe bananas

30 vanilla wafers

2 cups heavy whipping cream

4 Tablespoons powdered sugar

1/2 teaspoon vanilla extract

6 whole maraschino cherries

Instructions:

Chill small bowl and beaters (for beating whipping cream)

Separate eggs. Add egg yolks & milk to microwave safe bowl. Beat until foamy. Add sugar, flour & salt. Microwave for 3 minutes; remove and whisk until smooth. Microwave for and additional 2 minutes; remove and whisk til smooth. May need to cook an additional minute or two. (Mixture should be cooked, thick, but pourable.). Add vanilla extract and stir. Cool for about 20 minutes, or until barely warm. Remove bowl and beaters from refrigerator and beat whipping cream. Add Powdered sugar and vanilla extract; return to refrigerator until pudding mixture has cooled. Fold in half the whipped cream into the banana pudding mixture. Peel and slice bananas; add bananas and vanilla wavers to pretty clear bowl, or individual serving bowls. Add pudding mixture to bananas and wafers. Top with remaining whipped cream. Refrigerate until ready to serve. Pat cherries dry with paper towel to absorb liquid. Top banana pudding with cherries.
