Broccoli and Rice Casserole

Ingredients

3   tablespoons butter

1/4  cup chopped onion

1 cup uncooked rice

2  cups water or chicken broth

1 pkg frozen broccoli florets, cooked

1  can cream of chicken soup

1  can cream of mushroom soup

1/2  jar of cheese whiz 

8 oz shredded cheddar cheese

salt and black pepper to taste.

 

Instructions

Preheat the oven to 350 degrees.

Add rice and water to a saucepan and cook for 20 minutes; covered. If using salted broth no need to add salt but if using water add salt to rice.. 

In a skillet or large baking dish saute the onions in the butter until tender.  Add cooked rice, soups, cooked broccoli, seasonings, cheese whiz and 4 oz of cheddar cheese. Stir well to combine. If the florets are big, cut them into smaller pieces.

Bake for 30 minutes, remove from the oven and top with the other 4 ozs of cheddar cheese. Return to the oven and bake for 15-20 minutes or until bubbly and light brown.

TIP

If you prefer to only use cheddar cheese and not cheese whiz just use more cheddar cheese.
