BBQ Chicken and BBQ Sauce
BBQ Sauce
Ingredients
2 cups ketchup
1 cup Imperial light brown sugar
6 Tablespoons liquid smoke
2 Tablespoons prepared mustard
½ cup diced onion
2 teaspoons roasted pecan flavored syrup (can use maple)
Instructions
Using food chopper, dice onions. Add all ingredients into 2 quart saucepan. Cook on low heat, stirring until sugar is dissolved. Cook on medium heat, stirring frequently, for about 10 minutes. Set aside to cool.
BBQ Chicken:
Ingredients
4 large chicken breasts or thighs, or whole chicken cut into 8 pieces
2 teaspoons salt
1 teaspoon black pepper
¼ teaspoon garlic powder
1/8 teaspoon onion salt
¼ teaspoon paprika
¼ teaspoon cayenne
¼ teaspoon celery seed
1 regular size can low sodium chicken broth
Instructions
Preheat oven to 375 degrees.
Prepare chicken by washing and patting dry. Combine all seasonings in small bowl and whisk together. Generously season both sides of chicken. Using a pastry brush, Brush both sides of chicken pieces with BBQ sauce. Slowly pour chicken broth over chicken. Place in Dutch Oven, or baking dish and cover. Bake for 1 hour, or until done. (Check for doneness after 45 minutes).
