Apple Cinnamon Streusel Loaf Cake

Ingredients

1/4 cup sugar

1/2 cup flour

5 tbsp brown sugar, packed

1 1/2 tsp ground cinnamon

1/4  cup unsalted butter, cold and cut into small pieces

 

In a small bowl combine all ingredients using a fork or a pastry blender. Mix until it resembles coarse crumbs. Set aside.

 

Batter:

1/2 tsp salt

1 1/2 cups flour

1 1/2 tsp baking powder

1/2 tsp baking soda

1 1/2 tsp ground cinnamon

1/2 tsp nutmeg

 

In a medium bowl whisk all dry ingredients and set aside.

 

Preheat the oven to 350 degrees.

 

1/2 cup unsalted butter, softened.

1/2 cup sugar

1/2 cup brown sugar, packed

2 eggs

1 tsp vanilla extract

1/2 cup sour cream

 

1 1/2 cups diced apples, peeled

1 cup nuts, (walnuts or pecans)

 

In a large bowl, add softened butter, sugar, brown sugar and beat until light and fluffy, about 2-3 minutes.

Add eggs one at a time, beating after each one. Stir in the vanilla.

Gradually add dry ingredients into the butter mixture. Alternate the flour mixture with the sour cream ending with the flour mixture.

 

Fold in the diced apples and nuts into the batter.

 

Pour half the batter into a 9x5 loaf pan that has been greased and floured. 

Using a spoon spread half of the streusel on top of batter. Pour remaining batter on top of the streusel and then top with the remaining streusel.

Bake for 50-60 minutes.

 

Glaze: OPT

1 tbsp melted butter

1/2 cup powdered sugar

1 tbsp milk

1/4 tsp vanilla extract

Whisk well and drizzle over the top of the loaf.
