Bojangles Copy Cat Boneless Chicken Breasts

Ingredients

·         4 thin boneless chicken breasts

  • 1/2 cup All-purpose flour

  • 1 Egg (beaten)

  • 1/4 teaspoon Cayenne pepper

  • 1 tbsp Cajun seasoning

  • Vegetable oil (for frying)

  • Paprika powder (for dusting)

  • Salt and black pepper to taste

Instructions

For biscuits:

In large mixing bowl, add 2 ½ cups self rising flour, 1 teaspoon baking powder and about 2 ½ cups heavy cream.  Mix until combined.  Empty dough out onto floured pastry mat and gently form a about a 10” circle.  Cut biscuits out with a cutter or glass.  Melt ½ stick butter and brush bottom of baking dish with butter.  Using remaining butter brush tops of biscuits.  Bake in 450 oven for about 15 minutes, or until golden brown. 


For Chicken:

1.                  in a mixing bowl, combine the chicken pieces, flour, egg, cayenne pepper, and Cajun seasoning. Mix well making sure all chicken pieces are evenly coated.

2.                  Put about ½ - ¾ cup vegetable oil in large skillet & Heat oil to about 330 – 335 degrees.

3.                  Add the chicken pieces and cook until golden brown, about 5 minutes per side, or until tender. Do not overcrowd chicken in skillet. 

Remove from the heat and dust with paprika powder. Serve with salt and black pepper to taste.            Using a fork, open biscuit and place piece of chicken in biscuit.  Drizzle or serve with warm honey!
