New Potatoes and Green Beans

Ingredients

2 -3  pounds fresh new potatoes, scraped and washed

1 pounds fresh green beans, snapped and washed

4 pieces bacon cooked crisp & cut into 2 inch pieces

1 teaspoon bacon drippings

1 ½ teaspoons salt

1 teaspoon black pepper

1 teaspoon white vinegar

Instructions

Scrap and wash potatoes, making sure to get any eyes out of the potatoes.  Snap and wash green beans.

Cook bacon in microwave on microwave safe plate or paper plate.  Cover with another paper plate.  Cook for 2.25 minutes, remove and turn bacon.  Cook 30 seconds at a time, turning after each time until bacon is crisp.  Let cool; then cut into pieces.  Reserve 1 teaspoon or more bacon drippings to cook potatoes in.

Place potatoes in 5 quart or larger pot.  Cover with cold water.  Bring to a boil; add salt, black pepper, vinegar & bacon drippings.  Add bacon pieces.  Boil for about 8 minutes; add green beans.  Cook until fork tender.

Serve with hot cornbread.
