Pralines

Ingredients

1  cup light brown Imperial sugar, packed

1  cup Imperial granulated sugar

1/2  cup evaporated milk

1/8  teaspoon salt

4  tablespoons butter, softened 

1  teaspoon vanilla extract

1 1/4  cups chopped pecans

 

Instructions

In a heavy medium saucepan, bring both sugars, milk and salt to a rolling boil; stirring occasionally. After it comes to a boil, cook for 4 minutes. Timing is very important. Lay wax paper down on the counter while it's boiling. 

Remove from the  saucepan from the heat; add butter, vanilla and pecans. Beat until the mixture becomes thick. Quickly drop spoonfuls onto the wax paper. You have to work quickly or it will become hardened.

Let the pralines cool and set. Makes about 12 depending on the size of spoon you use.
