Pecan Pie
Ingredients
1 unbaked pie shell
1 cup light corn syrup (Karo, red label)
3 large eggs
1 ½ cups pecan halves (can use chopped) (Note: make sure pecans are fresh; do not use old pecans)
1 cup Imperial granulated sugar
2 Tablespoons melted butter
1 teaspoon vanilla extract
Instructions
Prepare one 9” pie crust; can use store bought. TIP: spray bottom of pie plate before adding pie crust.
Preheat oven to 350 degrees.
Beat eggs with electric mixer in medium mixing bowl. Add light corn syrup, granulated sugar, melted butter & vanilla extract. Mix well. Fold in pecan halves. Place pie crust on baking sheet. Pour pie mixture into pie crust. Bake on center rack of oven for about an hour. Check for doneness. Middle of pie will be a little shaky. Do not bake over 70 minutes. Cool completely; then store in refrigerator until ready to serve.
