Broccoli Potato Cheese Soup

Ingredients

6  cups chicken broth

2  large crowns of broccoli, chopped

3  carrots, shredded

3  large potatoes, diced

1/2  onion, chopped

2  cups heavy cream

3  tablespoons butter

2  teaspoons salt

1  teaspoon black pepper

1  teaspoon garlic powder

4  oz cream cheese

4  cups cheddar cheese, shredded

 

Instructions

Cut the broccoli up and steam until tender, 5-10 minutes. 

In a large pot add chicken broth, onions, diced potatoes, black pepper, garlic powder, salt and butter. Cook over medium high heat until potatoes are tender. Using an immersion blender just beat a few seconds to mash up the potatoes, leaving some chunks. Add shredded carrots and cook for 10 minutes.

Add steamed broccoli, heavy cream and the cream cheese. Cook for 10 minutes or until cream cheese melts. Add cheddar cheese and cook until the cheese melts. 

TIP

You can steam carrots with the broccoli if you prefer. You can steam the broccoli over some chicken broth instead of water if you prefer. This will give the broccoli more favor.
