Herb Roasted Turkey Breast
Ingredients
Herb-Roasted Turkey Breast (New)
5 pound boneless turkey breast (can use 2 small ones that total 5 pounds weight)
2 Tablespoons extra virgin olive oil, or vegetable or canola oil
1 Tablespoon chopped fresh sage (can use 1 teaspoon rubbed sage)
1 Tablespoon chopped fresh rosemary
1 Tablespoon minced garlic
½ teaspoon celery seed
2 teaspoons salt
1 teaspoon black pepper
1 orange, cut into quarters
1 medium size onion, cut in half
Instructions
In small bowl, combine oil, sage, rosemary, garlic, celery seed and salt and black pepper. Mix to form a paste. Smear all over turkey breast, including under the skin. Place turkey breast skin side on top. Add onion and orange. Place in large Ziplock bag, making sure you close tightly and refrigerate for 6 – 24 hours.
Preheat oven to 350 degrees. Remove turkey breast, onion and orange and place in center of heavy roasting pan, fitted with roasting rack. Roast until juices run clear, about 90 – 105 minutes, or until thickest part reaches 165 degrees on meat thermometer. Let rest, loosely tented with foil for about 30 minutes before carving. Refrigerate any leftovers.
