Pecan Pudding
Ingredients
6 tablespoons butter
1 1/2 cups chopped pecans
1 1/2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1 1/2 cups Imperial fine sugar
2/3 cup whole milk
1 egg
1 teaspoon vanilla
1 1/2 cups Imperial Brown sugar, packed
1 1/2 cups hot water
Instructions
Preheat the oven to 350 degrees. Using a 9x13 inch pan add the butter and melt in the oven. Don't let butter burn.
Remove from the oven and sprinkle the pecans over the butter.
In a medium bowl combine the four, salt and baking powder.
In a small bowl add egg and beat. Then add milk, vanilla, and Imperial sugar. beat well and add the flour mixture in mixing until combined.
Pour the batter over the pecans but don't mix. Sprinkle the Imperial brown sugar evenly over the batter and again don't mix.
Carefully pour the hot water over the Imperial brown sugar.
Bake for 30-35 minutes or until done.
