Smashed Taco Burgers
Ingredients
1 lb lean ground beef
1 package medium size flour tortillas
¼ head ice burg lettuce, shredded
3 ripe tomatoes, diced
¼ cup cheddar cheese, shredded
1/3 cup white queso, warmed.
1 seeded, veined and chopped jalapeno pepper
1 teaspoon salt
1 teaspoon taco seasoning
½ teaspoon black pepper
1 teaspoon vegetable oil
Dash cayenne
1 Tablespoon butter
Salsa or taco sauce, optional
Sour Cream, optional
Instructions:
Wash and shred lettuce. Using a paper towel, blot all excess moisture from lettuce. Shred cheese. Wash and dice tomatoes; wash, de-vein and dice jalapeno. Heat queso and cover until ready to use.
In medium mixing bowl, add ground beef, salt, black pepper, taco seasoning and cayenne pepper; mix together well, making sure seasoning is well distributed. Heat a grill pan or large skillet. Using a large cookie scoop (3 Tablespoons), add a scoop of seasoned ground meat in center of flour tortilla. Using your hands, spread it evenly over tortilla. Brush hot grill pan with vegetable oil. Add meat side down to hot grill pan. Add grill press on top of tortilla. Cook on medium high heat for about 5 minutes, or until meat is done (should not be pink, but fully cooked). Remove from grill pan. Add butter to another pre-heated skillet and place cooked burger tortilla side down. Cook until the tortilla is brown and crisp, about 2 minutes. Using a spatula, fold cooked smash burger over like an omelet. Place in taco holder (this will keep it from closing completely. Add lettuce, tomatoes, peppers, shredded cheese and top with warm queso. Add toppings of your choice, like salas, taco sauce, or sour cream. Serve hot.
