Fried Carrot Chips and Spicy Dipping Sauce
Ingredients
8 – 10 large carrots
24 ounces vegetable oil
1 – 2 teaspoons sea salt
24 – 36 ounces vegetable oil
Instructions
Peel carrots. Using the thinnest setting on a mandolin, slice carrots cross ways. Place on paper towel and pat dry. Heat oil in medium size heavy pot. Make sure there is enough oil to deep fry the carrot chips in. Oil should be at about 375 degrees. Fry for about 2 minutes, or until golden brown. Remove with a spider and let drain on a rack or paper towel. Immediately sprinkle with sea salt.
Spicy Dipping Sauce:
1 cup olive oil mayo
2 Tablespoon lemon, or lime juice
6 – 8 dashes hot sauce
Instructions:
In small bowl, combine all ingredients; whisk together. Cover and refrigerate until ready to use.
