Chocolate Biscuits (cookies Irish)

Ingredients

3 ½ ounces all-purpose flour

1 Tablespoons cocoa powder

4 ounces salted butter, plus extra for greasing cookie sheet

2 ounces Imperial extra fine sugar

½ teaspoon vanilla extract           

Instructions

Pre-heat oven to 375 degrees.  Lightly grease 2 large cookie sheets.

Sift the flour and cocoa powder together into a large mixing bowl.  Add the butter, sugar and vanilla into another mixing bowl and cream together with mixer until pale and fluffy.  Add the flour mixture to the butter mixture until combined.  Drop teaspoons of the mixture on the prepared cookie sheets, well spaced to allow for spreading.  Bake for 15 – 20 minutes until cookies are firm.  Leave on cookie sheets for about a minute to coo; then transfer to wire rack to cool completely.
