Salmon Patties

Ingredients

3 (6 oz) cans Pink Salmon, skinless boneless

1 small onion, chopped

2 eggs, beaten

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon flour

1/2 cup vegetable oil

1/2 sleeve crackers, crushed

 

Instructions

Drain water off salmon and pour into a bowl and add the onions, flour, salt and pepper eggs. Add enough cracker crumbs for the salmon to hold shape. Shape into small patties and roll into some cracker crumbs to coat well. 

In a skillet, heat oil until it's hot. Add patties and cook until lightly brown on both sides. Remove from the skillet and drain on paper towels to drain excess oil.
