Mexican Cornbread

Ingredients

1  cup yellow cornmeal

1/2  teaspoon baking soda

1  teaspoon salt

1/2  cup oil

1  cup milk 

2  eggs, beaten

1 (14.75 oz) can cream-style corn

1  cup cheddar cheese, shredded

1/2  cup onion, chopped

3  jalapeno peppers, chopped

1  lb ground meat

2  tablespoons crisco

 

Instructions

Preheat the oven to 350 degrees. 

In a skillet add ground meat, onions and peppers. Cook until the meat is no longer pink. Drain off any grease with a paper towel. Set aside. 

Using a cast iron skillet add the crisco, spreading up the sides and bottom.

In a bowl add the cornmeal, baking soda, salt, oil, milk, eggs and corn. Mix well.

Pour half the cornmeal mixture into the greased skillet, sprinkle all the cheese and the meat mixture over the cornmeal mixture and then pour the  remaining cornmeal mixture over the top.

Bake for 45 minutes or until done.
