Texas Peanut Patties
Ingredients
2 cups Imperial granulated sugar
2 cups raw shelled peanuts
2/3 cup light corn syrup
2/8 teaspoon salt
4 Tablespoons water
4 Tablespoons butter
2 teaspoons vanilla extract
2 teaspoons red food coloring
Instructions
Prepare small foil pans (or large one if you want to break into pieces), by lightly buttering bottom and sides of pans. Set aside.
Using a 2 quart or larger heavy saucepan, combine sugar, light corn syrup, water, salt & peanuts. Stir until combined. Cook on low/medium heat until sugar is dissolved. Turn up to medium and cook to 245 Degrees on candy thermometer. Remove from heat, add butter, vanilla extract and red food coloring; stir well until butter is melted and combined. Stir every 2/3 minutes real good (about 20/22 minutes). Mixture will thicken and loose it’s glossy shine. Do not rush this or it won’t set. Spoon into prepared pans. Let cool completely before removing. If you’re using small foil pans, Wrap individual pieces with good plastic wrap. If you poured it all onto one pan, break into pieces and store in airtight container. Will keep well.
