Broccoli and Cauliflower Salad
Ingredients (Salad)
2 bundles broccoli florets, bite size pieces
1 cauliflower florets, bite size pieces
1 red onion, chopped
1/2 cup carrots, grated
1 cup golden raisins
1 cup dried cranberries
1 cup walnuts or almonds, chopped
1 cup ham, diced
8 strips bacon pieces, cooked crispy, chopped
Instructions
Make the dressing using recipe below first. Then, fry bacon til crispy, cool, and chop into pieces. Soak the raisins in about one cup of warm water til you get the vegetables and nuts cut up. Chop the broccoli florets & cauliflower florets into tiny pieces. Chop onion, carrots and walnuts into small pieces. Drain raisins. Add broccoli, cauliflower, carrots, onions, raisins, cranberries and walnuts in the salad bowl. Toss well, add a little dressing, toss and, if need more, add a small amount again. You may not need all the dressing. Put bacon pieces and ham pieces in separate baggies and mix in just before serving.
Ingredients (Dressing)
1 pkg Good Seasoning Italian seasoning mix
1/2 cup (heaping) plain Greek yogurt
1/2 cup light mayonnaise
1/4 cup honey
2 teaspoons red wine vinegar or apple cider vinegar
1 Tablespoon granulated sugar
1/4 teaspoon salt
1/2 cup Parmesan cheese
Instructions
In a bowl, mix Italian seasoning mix, yogurt, mayonnaise, honey, vinegar, sugar, salt and Parmesan cheese for the dressing together, in that order and set in the refrigerator while you are making the salad.
