Chewy Brownies

Ingredients

  • 1 ¼ cups Imperial granulated sugar

  • ½ cup salted butter, melted and cooled

  • 1 tablespoon vanilla extract

  • ¾ cup all-purpose flour

  • ½ cup unsweetened cocoa powder

  • ¼ teaspoon flaked salt

  • ¼ teaspoon baking soda

  • 2 large eggs

  • 1 cup semisweet chocolate chips

  • ½ cup chopped & toasted pecans

  • 1 ½ tablespoons all-purpose flour

 

Instructions

Preheat the oven to 350 degrees F; generously grease an 8” square baking pan or dish. 

1.   Sift 3/4 cup flour, cocoa powder, salt, and baking soda together in a small mixing bowl.

2.   Combine sugar, butter, and vanilla extract in a medium mixing bowl. Beat with an electric mixer until smooth and fluffy.

3.   Beat eggs, one at a time, into the sugar and butter mixture, until thoroughly combined. Add the flour mixture a little at a time, mixing slowly until batter is just combined.

4.   Add chocolate chips and toasted pecans with 1 1/2 tablespoons flour. Fold into the batter. Pour batter into the generously greased baking pan and use a rubber spatula to level off the top.

5.   Bake in the preheated oven until edges are set and start to pull away from the sides of the pan, 20 to 30 minutes. Let cool until center firms up.

NOTE:  to toast pecans:  add to microwave safe dish.  Microwave for 30 seconds at a time, stirring after each time.  Repeat 3 more times.  Cool and roughly chop pecans. 

NOTE:

A toothpick inserted into the brownies should never come out completely clean since these are to be gooey. They will set up cooling. Do not overbake.
