Coconut Fried Pie Filling

Ingredients:

3 cups whole milk

2 3/4 cups granulated sugar

5 egg yolks

2 cups angel flake sweetened coconut

1 1/4 cup corn starch

1 Tablespoon salted butter

1 teaspoon vanilla extract

1/2 teaspoon salt

1/2 teaspoon coconut extract

Instructions:

Separate egg yolks. Add to milk and beat well. In large microwave bowl, add sugar, corn starch & salt. Whisk together. Add milk/egg yolk mixture to dry ingredients and whisk together. Microwave for 3 minutes; remove and stir. Cook for 3 minutes; remove and stir. Cook for an additional 3 minutes, whisk together. Mixture should be thicker than pie filling but not stiff. (May need to cook an additional 3 minutes, depending on the wattage of your microwave. Add butter, vanilla extract and coconut extract and stir. Fold in coconut. Cool completely before adding filling to rolled out fried pies.
