Peanut Butter Chocolate Chip Muffins
Ingredients
1 cup chunky or creamy peanut butter
1 large egg
1/3 cup Imperial light brown sugar
1/3 cup Imperial granulated sugar
1 cup whole milk
1 ½ cups all purpose flour
1 Tablespoon baking powder
½ teaspoon salt
½ cup milk chocolate chips
1 teaspoon vanilla extract
Instructions
Preheat oven to 375 degrees. Line muffin pan with paper cups.
Add peanut butter, egg and light brown sugar and granulated sugar to medium mixing bowl. Beat with electric mixer until creamed together well. In small bowl combine flour, baking powder and salt and stir with whisk. Alternate flour mixture with milk, beating slightly after each addition. Do not overmix. Fold in chocolate chips and mix til combined. Fill muffin cups. Bake for about 20 minutes, or until done. Do not overbake. Makes a dozen muffins.
