Sandies

Ingredients

1 cup Real Butter, softened  (used salted butter)

1/3 cup white granulated sugar

2 teaspoons Vanilla Extract

2 teaspoons water

2 cups All purpose flour (use a good flour; I like Gold Medal)

1 cup chopped pecans

2 cups powdered sugar

Instructions

Pre-heat oven to 325 degrees.

Cream butter and sugar together.  Add vanilla extract and water.  Add flour, making sure it is well blended.  Dough should not be crumbly; you should be able to bring it together in a ball.  Add chopped pecans.  Shape into small balls.  Slightly press ball down with your thumb.  Place on ungreased baking sheet & bake for 20 minutes.

Have a large baking sheet or tray ready to place the cookies on after you remove them from the oven.  I cover the tray in freezer paper, taping it to the back of the pan so it doesn’t slide.  Cover the bottom in powdered sugar.  Place warm cookies on the tray; cover the cookies in more powdered sugar.  The more Powdered sugar the cookie absorbs, the better they are.  You’ll have to do this several times; makes 3 dozen.  This is an easy recipe to double.
