Jalapeno-Lime-Chicken

Ingredients

8 bone-in chicken thighs

4 tablespoons jalapeno jelly

1 tablespoon olive oil

2 tablespoons lime juice

1 teaspoon minced garlic

1 teaspoon chili powder

1/2 teaspoon black pepper

1/8 teaspoon salt

1 teaspoon chipotle seasoning (or ground red pepper)

 

Instructions

Preheat the oven to 400 degrees. Line a 15x10-inch baking sheet pan with foil: spray the foil with nonstick cooking spray. Arrange chicken on the pan skin side. up.

Bake for 15 minutes; remove from the oven and drain grease off.  

In a small bowl combine jalapeno jelly, oil, lime juice, garlic, chili powder, black pepper, salt and chipotle seasoning. Mix well.

Turn chicken over and brush each thigh with half of the jelly mixture. Return to the oven and bake for another 20 minutes. Remove from the oven and turn over again to brush the other half of the jelly mixture on each thigh. Return to the oven and bake for 15 minutes or until cooked through (165F).
