Hush Puppies

Ingredients

1 1/2 cups yellow cornmeal

1 1/2  cups water

1/3  cup milk

1  tablespoon vegetable oil

2  teaspoons grated onion

2  eggs

1  cup all-purpose flour

1  tablespoon baking powder

1  teaspoon salt

1  teaspoon Imperial sugar

vegetable oil for frying

 

Instructions

In a saucepan cook cornmeal and water over medium heat for 5-6 minutes, stirring constantly, until mixture has thickened and begins to form a ball. Remove from the heat and add the milk, vegetable oil and the onion. Stir until well combined.

In a medium bowl, beat eggs slightly. Add flour, baking powder,salt and sugar. Beat until well combined. Add this to the cornmeal mixture and beat until smooth.

In a deep fryer or deep pan, heat enough vegetable oil to be 1-2 inches deep. Temperature should be 375 F. Drop teaspoons full of mixture into hot oil. Cook for 5-7 minutes or until golden brown. Line a baking pan with paper towels and use a wire rack in the baking pan. Drain on the rack.
