Chicken Pot Pie Casserole

Ingredients

1/2  cup butter, melted

1/2. Cup chopped onions

4  cups shredded cooked chicken

1  bag frozen peas and carrots, thawed

2  cups whole milk

2. Cups Red Lobster Cheddar Bay Biscuit mix

Seasoning package included in box mix

2. Cups chicken stock or broth

1. Can cream of chicken soup 

1/2  teaspoon black pepper. 

 

Instructions

Preheat the oven to 350 degrees. 

In a skillet melt butter and add onions. Cook until the onions are cooked tender not brown. Pour butter and onions into a 9x13 pan and coat the sides of pan. 

Add cooked chopped chicken and then peas and carrots. 

In a small bowl combine biscuit mix, milk and seasoning packet, whisk together good. Pour the mixture over the chicken and peas. 

In another bowl whisk the chicken stock, black pepper and cream of chicken soup and pour over biscuit mix. Pour slowly and do not stir. 

Sprinkle the shredded cheese to top without stirring. 

Bake for 45 minutes or until golden brown.
