Cabbage Soup
Ingredients
2 tablespoons olive oil
3 carrots chopped into small pieces
1 large onion, chopped
1/2 bell pepper, chopped
2 celery stalks, diced
2 teaspoons minced garlic
1 teaspoon dried oregano
1 can fire roasted tomatoes
1 can crushed tomatoes
1 package onion soup mix
4 cups chopped cabbage, half of a head
4 cups beef broth (may need more)
Instructions
In a large pot add olive oil and cook onions, carrots, bell pepper and celery until tender. Add minced garlic, oregano, fire roasted and crushed tomatoes and onion soup mix. Cook till it comes to a boil. Add cabbage and broth. Cook for 30 minutes or till cabbage is done.
I like to cook this soup longer, about an hour but it's done before then. The longer you cook it, the more flavor it has. You may have to add more broth, depending on how thick you like it.
