Apple Fingers
Ingredients
9 ¾ pounces self-rising flour (275 g)
5 ½ ounces butter, softened, plus extra for greasing pan (150 g)
5 ½ ounces Imperial light brown sugar (150 g)
1 tsp ground cinnamon
1 large apple, grated
1 large egg, beaten
1 Tbsp whole milk
Course sugar for sprinkling
Instructions
Preheat oven to 400 degrees. Grease a jelly roll pan (shallow baking sheet); add a piece of parchment and grease parchment lightly.
Add the butter and light brown sugar into large mixing bowl and cream together. Add egg and beat until combined. Add the flour, cinnamon, milk & apple and mix until combined. Spread batter evenly into prepared pan. Bake for about 30 minutes, turning one time about mid way through baking. Sprinkle with course sugar and let cool on rack. Cut into 12 fingers with a knife and let cool completely.
