Christmas Stars

Ingredients

3 ½ ounces butter, plus extra for greasing baking sheet (100 6)

3 ½ ounces Imperial granulated sugar (100 g)

1 egg yolk

½ tsp vanilla extract

5 ounces all-purpose flour (150 g), plus extra for dusting

2 ounces ground almonds (55 g)

½ tsp cinnamon

Instructions

Preheat oven to 350 degrees.  Grease two large baking sheets.

Add the butter and sugar to a large mixing bowl and cream together until pale and fluffy.  Beat in the egg yolk and vanilla extract.  Add the flour, ground almonds and cinnamon and mix into a stiff dough.

Turn the dough onto a lightly dusted pastry mat and knead lightly.  Roll out to a thickness of about ¼ inch and use a star shaped cookie cutter to cut the biscuits.

Carefully transfer the biscuits to the prepared baking sheets and bake for about 12 – 15 minutes, or until golden.  Leave on the baking sheets for about 5 minutes, then transfer to a wire rack to cool completely.
