Brown Sugar Cinnamon Pop Tarts

CRUST:

2 1/2 cups flour

1 tsp salt

4 tsp sugar

2 sticks butter, cold and diced (1 cup)

1/2 cup ice water

 

FILLING:

3/4 cup light brown sugar

2 1/4 tsp cinnamon

1 1/2 tbsp flour

3/4 tsp vanilla extract

1 1/2 tbsp butter, melted

1 egg yolk 

 

GLAZE:

4 tbsp butter

1/2 dark brown sugar

2 tbsp milk

1/4 tsp vanilla extract

2/3 cup powdered sugar

3/4 tsp cinnamon

 

In a food processor or bowl add flour,salt,sugar and cold butter pieces. If using a bowl mix with a pastry blender or using your hands, If using a food processor pulse several times till the butter pieces are the size of a pea. Add ice water and pulse at the same time.

On a floured mat pour your dough out and gently knead into a ball. Divide the dough into half. Cut plastic wrap large enough to wrap each ball of dough. Flatten each ball into a rectangle about 1/2 inch thick. Place in the refrigerator and chill for a couple of hours.

In a bowl combine brown sugar, cinnamon, flour,vanilla and melted butter and mix well.

Preheat the oven to 300 degrees and line your baking sheet with parchment paper.

Flour your pastry mat well and roll out each dough ball  to a 14x14 square. Roll out thin, about 1/8 inch thick. You will need to flour your rolling pin and dough well.

Cut your dough into 3.5x4.75 rectangles.  You will need two for each pop tart.

Spoon about one tablespoon of filling into half of the rectangles. Leave a small edge without filling. Beat the egg yolk and brush around the border of the filling.

Fork the other half of the rectangles with a fork. Placing the forked piece on top of the filling piece. Press the edges down around the pop tart and using a fork seal the edges. You can use a bench scraper to cut edges to be straight. Repeat till you have filled and sealed all pop tarts.

Bake for 25-30 minutes. Cool slightly before adding the glaze.

 

GLAZE

In a saucepan add butter, brown sugar and milk. Cook over medium heat. Bring to a boil and simmer for 1-2 minutes. Using a whisk, whisk until the brown sugar is dissolved. Remove from the heat and add in the vanilla, powdered sugar and cinnamon. Whisk constantly then spread over the cooled pop tarts. This will harden quickly so if it does put back on the heat and it will loosen up.
