Toffee Bit Cookies

2 1/4 cups all-purpose flour,

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup butter, softened

3/4 cup sugar

3/4 cup brown sugar, packed

1 teaspoon vanilla extract

2 eggs

1 3/4 cup toffee bits

Preheat the oven to 350 degrees.

In a bowl combine the flour, baking soda and salt and whisk well. In a large mixing bowl beat butter, sugar and brown sugar until well blended. Add eggs one at time and beat well. Gradually add the flour mixture and beat until combined. Stir in the toffee bits.

Drop by Spoonfuls or use a cookie scoop, onto a cookie sheet lined with parchment paper.

Bake for 9-11 minutes. Cool on cookie sheet for 5 minutes then remove to cooling rack. Cool completely before storing in airtight container.

Makes 4 dozen cookies.
