Shortbread Fingers (Irish)
Ingredients
4 ½ ounces salted butter, softened
2 ounces Imperial extra fine sugar, plus extra for sprinkling
6 ounces all-purpose flour, plus extra for dusting
Instructions
Preheat oven to 375 degrees. Line 2 baking sheets with parchment paper, or silicon pad.
Put the butter and sugar into a mixing bowl and cream together until pale and smooth. Add the flour and stir to a smooth paste.
Turn onto a lightly floured pastry mat and roll out to a thickness of about ½ inch. Cut into fingers and place on the prepared baking sheets. Sprinkle with sugar and chill in the fridge for about 15 minutes.
Bake for about 15 – 20 minutes until golden. Transfer to wire rack & cool completely.
