Sun Dried Tomato Chicken Pasta
Ingredients
2 tbsp olive oil
2 pounds boneless chicken breast, cut into bite size pieces
1 tsp garlic powder
3 tsp Italian seasoning
1 tsp basil seasoning
1/2 tsp red pepper flakes
1 tsp salt 1/2 tsp black pepper
1/2 cup onions, chopped
1 tsp minced garlic
2/3 cup sun dried tomatoes, drained and chopped
16 oz box uncooked penne pasta
5 cups chicken broth
4 cups baby spinach
4 oz cream cheese, room temperature
2 cups whole milk
1/2 cup shredded parmesan cheese
Instructions
In a large skillet add olive oil. Add chicken, salt, pepper, Italian seasoning, garlic powder and red pepper flakes. Cook over medium high heat for 6-8 minutes. Remove the chicken to a plate.
Add onions, sun dried tomatoes and minced garlic to the skillet. Add more oil if needed. Saute for a couple of minutes scraping the bottom. Pour in the chicken broth and basil seasoning.
Add pasta and lower the heat. Cook and stir often for 20 minutes. Add spinach and cook til it wilts.
Stir in the cream cheese and part of the parmesan until it is combined. Add the chicken back in the skillet and the milk. Cook for 3 minutes or until it thickens.
Remove from heat and top with remaining parmesan cheese.
