Potato Puffs

Ingredients

6  tablespoon melted butter

3-5  pounds Yukon Gold Potatoes

1/2  cup + 2 tablespoons grated parmesan cheese

3  teaspoon garlic powder

2  teaspoons onion powder

2  teaspoons paprika

2  teaspoons salt

1  teaspoon black pepper

2  tablespoons parsley

 

Instructions

Preheat the oven to 375 degrees

Wash, peel and thinly slice the potatoes.

Butter a muffin pan with two tablespoons of melted butter.

In a large bowl place the sliced potatoes, remaining butter, 4 tablespoons of parmesan cheese, garlic powder, onion powder, paprika, salt and pepper. Toss to coat each potato slice.

Layer the potato slices in the muffin pan till each cup is overfilled ( about 1/2 inch above rim )

Bake uncovered for 45 minutes to an hour, testing for doneness with a fork.

Let rest in the pan for 5 minutes before removing.  Top with parsley and you can add 2 tablespoons  parmesan cheese on top if desired.
