Swamp Fries
Ingredients
4 large Russet potatoes
1/3 cup olive oil or vegetable oil
Salt and pepper
Cayenne pepper to taste
2 cups shredded sharp cheddar cheese
1 cup shredded Colby or mozzarella cheese
12 slices bacon, cooked crispy and cut into 1” pieces
8 steak fingers, cooked and cut into bite sized pieces
Beef gravy
Jalapenos, optional
Choice of dressing
Hot sauce optional
Instructions
Wash and dry potatoes; cut into French fry pieces about ½ “ thick. Drizzle olive oil over French fries, then add seasonings to taste. Cook in 400 degree air fryer until done and crispy, or can cook on a baking sheet in 400 degree oven. Cook for about 15 minutes, turn and cook until done. Remove and place on rack to make sure they stay crispy.
While potatoes are cooking, cook bacon, either in microwave, skillet or oven. Cut into 1” pieces. Set aside.
Shred cheeses and set aside.
Cook store bought steak fingers (buy in freezer section) until done, following package directions. Cut into bite sized pieces.
Beef Gravy:
2 cans low sodium beef broth
1 Tablespoon beef base (Tone’s or other brand; can use 8 dissolved beef bouillon cubes into 3-4 cups hot water
3 Tablespoons vegetable oil
3 Tablespoons all-purpose flour
1 – 2 teaspoons salt, according to taste
1 teaspoon black pepper
In small pot, heat beef broth. Heat vegetable oil and add salt and pepper; let it sizzle; add flour and stir until combine with vegetable oil and smooth. Slowly add hot beef broth, while whisking gravy. Whisk until smooth and no lumps. Check for seasonings to see if it needs more salt or pepper.
To assemble:
I like to make individual servings. You can fix each one in a pie tin, or a small oven safe dish. Add French fries, cheese & bacon. Place in 400 degree oven for about 5 – 10 minutes, or until cheese is melted. Serve with your choice of dressing, hot sauce, jalapenos, or other toppings.
For the Steak finger ones:
Add French fries to individual oven safe container. Add steak finger bites and cover with hot gravy. This one doesn’t have to be heated in oven unless you want to add cheese; then return to oven until cheese is melted.
