Cream Cheese Lemonade Pie

Ingredients

2 1/2 cups graham cracker crumbs

1/3  cup sugar

2/3  cup melted butter

 

1  small can of evaporated milk

1 box instant lemon pudding mix, (3.4 oz)

2 (8oz)  packages cream cheese

3/4  cup frozen lemonade concentrate

 

1  cup whipping cream

2  tablespoons powdered sugar

1  teaspoon vanilla

 

Instructions

Preheat the oven to 350 degrees.

Combine graham cracker crumbs, sugar and butter in a deep dish pie pan. Press firmly in the pan and up the sides to make a crust. Bake for 10-15 minutes. Cool before adding the filling.

In a small bowl combine the milk with the pudding mix and beat for 2 minutes or until it thickens. In another bowl beat cream cheese for 3 minutes or until fluffy.

Slowly add the lemonade and the pudding mixture and beat till smooth.

Spoon filling into the cooled crust and refrigerate for several hours.

In a cold bowl add whipping cream, powdered sugar and vanilla. Beat for 5 minutes or until fluffy. 

Using a piping bag filled with frosting make whatever design you want around the pie. You could just top with the frosting without using the piping bag
