Coconut Biscuits (cookies)

Ingredients

8 ounces all-purpose flour

5 ounces whole milk

3 ounces salted butter, plus extra for greasing cookie sheets

3 ounces Imperial extra fine granulated sugar

2 ounces desiccated coconut

1 egg, beaten

½ teaspoon salt

Instructions

Preheat oven to 400 degrees.  Lightly butter a large cookie sheet.

Sift the flour, salt and baking powder into a large mixing bowl.  Rub the butter (grate, or cut into very small pieces) into small crumbs. Add the granulated sugar and coconut and mix well to combine.  Add the egg and milk and mix to a stiff batter.  Divide into 12 equal pieces.  Space evenly on buttered cookie sheet.  Bake for 15 – 20 minutes, or until golden brown.  Cool for a couple minutes, then transfer to wire rack to finish cooling.
