Fried Chicken
Ingredients
1 whole cut up chicken, or 8 pieces (any selection you’d prefer)
1 ½ - 2 cups cup all-purpose flour
2 Tablespoons corn starch or arrow root powder
2 cups buttermilk
2 teaspoons salt
1 teaspoon black pepper
½ teaspoon cayenne (optional)
½ teaspoon poultry seasoning, or seasoning of your choice
1 -2 cups vegetable oil (or, oil of your choice)
Instructions:
Cut up chicken, wash and trim excess fat off chicken pieces; place pieces in large Ziplock bag and add buttermilk; seal bag and refrigerate for about an hour (or can leave in overnight).
On medium high, heat heavy duty large pot or deep skillet; add oil and heat to about 360 degrees. Add flour, cornstarch or arrow root powder and seasonings to large Ziplock bag. Remove chicken from milk. Place chicken in flour/seasoning bag, one piece at a time and shake until chicken is coated; repeat with remaining chicken. Drop chicken into hot oil and brown on both sides. After chicken is browned on both sides, reduce heat and cover. Cook until chicken is completely done, about 20 – 30 minutes, depending on size of chicken pieces. Remove from hot oil and drain on rack or paper towel.
