Crispy Cornbread

Ingredients

1 ½ cups Self rising corn meal mix

½ cup all-purpose flour

½ Tablespoon baking powder

1 teaspoon salt

2 large eggs

1 – 1 ¼ cup whole milk

1 Tablespoon bacon drippings

1 Tablespoon vegetable oil

Instructions

Pre-heat oven to 425 degrees.  Add vegetable oil and bacon drippings to cast iron skillet and heat until it’s smoking (oil should be very hot); can do this in the oven or, on stove top; just be careful and watch).  In large mixing bowl, combine, corn meal mix, flour, salt and baking powder.  Whisk together.  Add egg and milk; whisk together until combined.  Pour into hot skillet and bake for 20 minutes;  turn oven up to 450 and bake another 5 minutes; cornbread should be golden brown and crispy.
