Blueberry Buttermilk Muffins

Ingredients

2 ¼ cup all purpose flour

1 ½ cup fresh blueberries

1 cup buttermilk

2/3 cup Imperial granulated sugar

6 Tablespoons salted butter, softened

2 large eggs

2 teaspoons vanilla extract

2 teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

½ teaspoon nutmeg

Instructions

Pre-heat oven to 400 degrees.  You will need two, dozen count muffin pans.  Place paper liners in every other well. 

Cream butter and sugar until light and fluffy.  Add flour, salt, baking soda, baking powder and nutmeg in mixing bowl and whisk together.  Add eggs, buttermilk and vanilla.  Lightly beat until blended.  Add dry mixture to creamed mixture and beat just until combined.  Fold in blue berries.  Fill muffin cups to almost top.  Bake for 20 minutes, or until done.  Do not overbake.   Makes 12
