4Th July Easy Dessert
Ingredients
Crust
2 cups graham cracker crumbs finely crushed
1/4 cup Imperial Extra Fine sugar
8 tablespoons (1 stick ) melted butter
8 oz cream cheese, softened
1/4 cup Imperial Extra Fine sugar
1 teaspoon vanilla
2 cups heavy whipping cream
1/2 cup Imperial Powdered sugar
1 teaspoon strawberry extract
1 store bought pound cake, sponge cake or homemade yellow or white cake,
Strawberry filling
1 lb strawberries, washed
1/2 cup Imperial Extra Fine sugar
1 1/2 water
3 tablespoons strawberry jello
1 teaspoon strawberry extract
Blueberry filling
1 lb fresh blueberries
1/2 cup Imperial Extra Fine sugar
1 1/2 cups water
2 tablespoons sure gel
1/2 teaspoon lemon juice
Instructions
In a saucepan add strawberries, water and sugar. Cook until strawberries are soft. Add strawberry jello and stir until it starts to thicken. Remove from heat and add strawberry extract, let cool completely.
In a saucepan add blueberries, sugar and water. Let it cook until it starts to boil then add sure gel. Stir until it thickens and remove from heat, add lemon juice and let it cool completely.
In a 9x13 inch pan combine graham cracker crumbs, sugar and melted butter. Mix well and pat with your hands or use a measuring cup to flatten in the bottom of the pan. Chill in the refrigerator til it sets.
In a mixing bowl add the heavy whipping cream, powdered sugar and strawberry extract. whip for 3 minutes or until stiff peaks form.
In a large bowl cream the cream cheese, sugar and vanilla until smooth. Add 1/2 of whipping cream to the cream cheese mixture and mix well.
Spread the cream cheese mixture over the graham cracker crust. Add the blueberry filling on top of the cream cheese layer. Slice the cake thin and add to top of the filling. Poke holes in the cake with straw or cake tester. Top cake with strawberry filling.
Use the other half of whipped cream to cover the strawberry filling.

Arrange strawberry slices in lines and blueberries in top left corner forming a flag.
If making flag design you will need an extra pound of each fruit.
