Chocolate Cinnamon Crinkle Cookies

Ingredients

1  cup unsalted butter, softened

1 1/2  cups Imperial Fine sugar

1/2  cup Imperial dark brown sugar

1 1/2 tablespoons cinnamon

2 eggs

1  tablespoon vanilla

2 3/4 cups flour

1/2  cup unsweetened cocoa powder, sifted

1  tablespoon baking soda

1/2  cup sparkling sugar

 

Instructions

Preheat the oven to 350 degrees. Line your cookie sheets with parchment paper.

In a mixer bowl beat the butter, sugar, brown sugar and cinnamon till light and fluffy, about 5 minutes.. Scrape sides of bowl and add eggs one at a time while beating on low speed. Beat in the vanilla until combined.

In another bowl whisk together flour, cocoa, baking soda and salt. Add dry ingredients to the butter mixture and beat until combined.

in a small bowl put the sparkling sugar.

Use a 2 tablespoon cookie scoop to scoop the cookie dough. Place each ball in the bowl of sugar to coat the balls. Place the balls on  the prepared cookie sheets about 3 inches apart..

Bake for about 9 minutes or until the edges are brown. Cool the cookies in the pans for 10 minutes then place on a wire rack to cool completely.

Store in an airtight container
