Sugar Crinkles
Ingredients
1 cup Vegetable shortening
1 ½ cup Imperial granulated sugar
2 large eggs
1 teaspoon lemon juice
1 teaspoon vanilla extract
2 ½ cup all purpose flour
½ teaspoon salt
¼ cup Imperial granulated sugar (to dip cookie balls into before baking)
Instructions
In medium mixing bowl, add flour, baking powder and salt and whisk together. In large mixing bowl, cream shortening and granulated sugar well. Add eggs one at a time and mix well. Add vanilla extract and lemon juice. Gradually add flour mixture and cream until all is combined. Repeat until you’ve used all dry ingredients. Chill doll for at least 1 hour. Preheat oven to 350 degrees. Using a medium cookie scoop (2 Tablespoons), scoop cookie dough and roll into balls. Roll in granulated sugar. Place onto lightly greased cookie sheets. Bake for about 8 – 9 minutes; they will be slightly brown around the edges. Do not overbake.
