Sausage and Roasted Vegetables

Ingredients

2  pounds potatoes; cubed

1  pound sausage, sliced

1  pound carrots, cut into 2-inch pieces

1  red bell pepper, quartered

1  yellow bell pepper; quartered

2  white onions; quartered

3  tablespoons olive oil

1  teaspoon paprika

1  teaspoon garlic parsley

1/4  teaspoon red pepper flakes

1  teaspoon thyme

1  teaspoon rosemary herb

1/2  teaspoon celery salt

 

Instructions

Preheat the oven to 400 degrees. Line a baking sheet pan with aluminum foil.

Transfer the potatoes, bell peppers, carrots and onions to the baking pan. Pour the olive oil over the vegetables. With your hands rub the oil over all the vegetables and potatoes, covering all. You may need more oil, if you do add more. Add the sliced sausage.

In a small bowl mix all dry spices and sprinkle over the vegetables. Cover with the aluminum foil.

Bake for 20 minutes. Remove from the oven and move the vegetables around and put back in the oven uncovered. Bake another 10 minutes.

OPT

You can sprinkle shredded cheddar cheese on top and put back in the oven to melt.
