Banana Date Nut Muffins

Ingredientsrin

1 stick salted butter, softened

1 ¾ cup all purpose flour

¾ cup Imperial granulated sugar

2 extra large eggs

1 cup mashed bananas

1 cup chopped dates

½ cup toasted and chopped walnuts

2 ¾ teaspoons baking powder

1 teaspoon salt

Instructions

Toast walnuts in microwave, 30 seconds at a time.  Remove and stir; repeat 3 more times.  Let cool.

Pre-heat oven to 350 degrees.  Line muffin tins with paper liners.

In large mixing bowl, add butter and sugar; cream until fluffy.  Add eggs and vanilla extract.  Cream until combined.  Add flour, baking powder & salt & mashed bananas.  Mix until smooth.  Fold in chopped dates and chopped walnuts.  Mix well.  Using a jumbo cookie scoop, fill muffin cups. 

Streusel topping
½ cup all purpose flour

¼ cup light brown sugar

¼ cup oats

4 Tablespoons cold butter, cut into pea size pieces

¼ teaspoon cinnamon

Dash nutmeg

Instructions

In small bowl, combine all ingredients and mix well.  You will need to use your hands to mix the butter into the dry ingredients.

Using a 2 Tablespoon cookie scoop, add 1 scoop to top of muffin batter. Bake for about 23 – 24 minutes.  Do not overbake.  Let cool and store in airtight container or bag.
