Southwestern Rice

Ingredients

1  tablespoon olive oil

1 green bell pepper, diced

1  medium onion, chopped

1  teaspoon minced garlic

1  cup uncooked rice

1/2  teaspoon ground cumin

1/8  teaspoon turmeric

1 3/4  cups chicken broth

1  cup frozen corn, thawed

1  can black beans, rinsed and drained

1  can Rotel tomatoes, undrained

 

Instructions

In a large skillet, heat oil and saute the bell peppers and onions until tender. Add garlic and cook while stirring for a minute. Stir in the rice, broth and spices. Bring to a boil then reduce the heat, cover and simmer for 15 minutes.

Stir in the corn, beans and tomatoes. Cover and cook until heated through.

TIP

You can add cheese on top after it's cooked if you like it with cheese.
