Baked Sweet Potato Pie

Ingredients:

3 medium sweet potatoes

1 1/3 cup granulated sugar

1/2 stick salted butter, melted

2 large eggs

1/2 cup evaporated milk

1 teaspoon ground cinnamon

pinch nutmeg

1 teaspoon vanilla extract

1/2 teaspoon salt

1 unbaked pie shell

Vegetable shortening for greasing sweet potatoes

Instructions:

Pre-heat oven to 375 degrees. Wash and pat dry sweet potatoes. Generously grease potatoes on all sides. Place on baking pan and bake for about an hour, or until done. NOTE: Can bake in air fryer. Let sweet potatoes cool, then cut into half and scoop out and place in medium size mixing bowl. In small bowl, add milk and egg; beat until foamy. Add sugar, salt, cinnamon, nutmeg, melted butter, and vanilla extract. Whisk together. Add to milk and egg mixture and beat until combined. Pour into unbaked pie shell, place on baking sheet and bake for about 40 minutes, remove pie from oven and loosely place foil over edges; return to oven and bake an additonal 20 minutes, or until a knife comes out clean when inserted into middle of pie. Cool completely; then refrigerate. Top with whipped cream if desired, or add decorative pieces of cooked pie crust in the shape of leaves.
