Roasted Sweet Potato Salad
Ingredients:
4 cups peeled and cubed sweet potatoes
1 Tablespoon Extra virgin olive oil
1/2 cup chopped walnuts or pecans, toasted
1/3 cup dried cherries, chopped
1/4 cup minced fresh parsley (optional)
2 Tablespoons mayonnaise
1 Tablespoon honey
4 1/2 teaspoons white vinegar
1/2 teaspoon grated lime zest
1/2 teaspoon salt
Instructions:
Pre-heat oven to 400 degrees. Peel and cut potatoes into 1 1/2 inch cubes. Place on large baking sheet. Drizzle with olive oil, making sure all potatoes are coated. Bake for 30 - 45 minutes, or until potatoes are done. Remove from oven and cool completely.
In a large bowl, add toasted walnuts, chopped cherries, and parsley. Add potatoes and gently toss. In small bowl add mayonnaise, vinegar, honey, salt and lime zest. Whisk together. Pour over potato mixture and toss to coat.
