Brownie Bites

Preheat the oven to 325 degrees and grease mini muffin pans.

1  cup butter, melted

6  tablespoons cocoa powder

1  cup boiling water

Melt butter in the microwave, add cocoa powder and boiling water, whisk until well combined. Set aside

3 eggs, well beaten

1/2  cup buttermilk

1  teaspoon vanilla extract

In a small bowl mix well, set aside.

2  cups sugar

2  cups all purpose flour

1/4  teaspoon salt

1  teaspoon baking soda

Whisk together in a large mixing bowl all dry ingredients. Pour the cocoa mixture into the dry ingredients and mix well. Add the egg mixture into the batter and mix well.

Using a small cookie scoop, fill the mini muffin pans. 

Bake for 14-16 minutes depending on your oven. Use a toothpick to test for doneness. 

Let cool for 5 minutes then put on a cooling rack. 

Frosting

3/4  cup butter

In a mixing bowl melt butter in the microwave then add:

1/3  cup of cocoa powder

1/4  cup whole milk + a tablespoon

1  teaspoon vanilla extract

Mix well until combined. You can mix by hand or with an electric mixer.

Add 3 1/2 cups of powdered sugar

This mixture should be thin, so you may have to add a little of milk at a time until desired consistency. 

While brownie bites are still warm pour frosting over the top of  each brownie. You should have the brownies on a rack with a cookie sheet under it to catch the overflow of the frosting.

Cool completely on the rack till frosting sets up (it will dry hard).

TIP:

You can make these in regular muffin pans or use mini pans. It should make 24 regular sizes and around 72 mini.
