Cranberry Cheese Log
Ingredients
1/3 cup unsalted pecan, chopped
1 8 oz cream cheese, softened
8 oz sharp cheddar cheese, grated
8 oz dried cranberries
1/3. Cup bacon bites
2 scallions, finely chopped
Instructions
Pulse nuts in a food processor until chopped but not fine. Set aside.
In a bowl or food processor add cream cheese and cheddar cheese and mix until combined. Add cranberries, bacon bites and scallions and mix well.
Shape the cheese mixture into a log using plastic wrap to shape. Refrigerate in plastic wrap for 20 minutes.
Unwrap the log and roll it in the chopped nuts (pecan) to coat completely. Rewrap the log in plastic wrap and chill in refrigerator for at least two hours or overnight.
